Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/2 cup shredded coconut
- 12 marshmallows
- 1 cup powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup heavy cream
- 1/2 cup shredded coconut for coating
Instructions:
Warm the oven up to 350 F 175C and put paper liners in a cupcake pan
Mix the flour, baking powder, and salt together in a bowl with a whisk
Mix the butter and sugar until they are light and fluffy in a different bowl
Adding the eggs one at a time and mixing them in is the next step
Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often
Start with the dry ingredients and end with the milk
Dont mix any further than that
Mix in the 1/2 cup of coconut shreds
Spread the batter out evenly in the cupcake liners
Bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool all the way down
Make a small hole in the middle of each cupcake and put a marshmallow in it
Over low heat, whisk the powdered sugar, cocoa powder, and heavy cream together in a saucepan until the mixture is smooth and shiny
Let the extra chocolate glaze drip off of each cupcake as you dip it in it, and then roll it in the shredded coconut to cover it
Put the cupcakes in the fridge to let the glaze set, and then serve them when theyre ready
