Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or preferred keto sweetener
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup coconut oil, melted
- 2 large eggs
- 1/2 tsp vanilla extract
- 1/2 cup fresh or frozen cherries, pitted and chopped
Instructions:
Start by heating the oven to 350F 175C
Mix the sweetener, baking powder, salt, almond flour, and coconut flour in a large bowl
Melt the coconut oil and mix it in with the eggs and vanilla extract
Mix everything together well
Add the chopped cherries slowly
Take eight equal pieces of dough and shape each one into a scone
Put the scones on a baking sheet that has parchment paper on it
It should be baked in a hot oven for 18 to 20 minutes, or until it turns golden brown and is fully cooked
