Ingredients:
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, diced
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 3 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
Instructions:
Warm the oven up to 190C 375F
Put the quinoa and chicken broth in a medium-sized saucepan
Bring to a boil, then turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is done and the liquid is full
Warm up the olive oil in a big pan over medium-low heat
Add the chicken to the pan and season it with salt and pepper
It will take about 6 to 8 minutes of cooking until the chicken is golden brown and fully cooked
Take the chicken out of the pan and set it aside
Put the onion, garlic, thyme, and oregano in the same pan
It will take about 34 minutes of cooking until the onions are clear and smell good
Put broccoli in the pan and cook for about 4 to 5 minutes, until it starts to get a little soft
Mix cooked quinoa, chicken, vegetables, cheddar cheese, Parmesan cheese, and heavy cream together in a large bowl
Mix everything together well
Move the mixture to a 9x13-inch baking dish that has been greased
Spread out evenly
After the oven is hot, bake for 20 to 25 minutes, or until the top is bubbly and golden brown
Enjoy while hot
