Ingredients:
- 1 pre-made tart crust
- 1 cup mixed fresh berries strawberries, blueberries, raspberries
- 1/4 cup apricot preserves
- 8 oz mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
Preheat oven to 350F 175C
Bake the pre-made tart crust according to package instructions until golden brown
Let it cool completely
In a small saucepan, warm the apricot preserves over low heat until it becomes a smooth glaze
Remove from heat and set aside
In a mixing bowl, combine mascarpone cheese, powdered sugar, and vanilla extract
Mix until smooth and well combined
Spread the mascarpone mixture evenly onto the cooled tart crust
Arrange the mixed fresh berries on top of the mascarpone layer in an attractive pattern
Using a pastry brush, gently glaze the berries with the warmed apricot preserves
Refrigerate the tart for at least 30 minutes before serving to allow the flavors to meld together
