Ingredients:
- 1 cup diced fresh pineapple
- 2 tablespoons brown sugar
- 4 flour tortillas
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh cilantro
- 1 jalapeo pepper, minced remove seeds for less heat
- 1 cup diced strawberries
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions:
Cut up the strawberries, red onion, jalapeo pepper, lime juice, honey, and a pinch of salt
Put them all in a small bowl
To make the spicy strawberry salsa, mix it well
Put away
Warm the vegetable oil in a medium-sized pan over medium-high heat
Put the brown sugar and diced pineapple in the pan
It will take about 5 to 7 minutes of stirring every now and then until the pineapple turns golden brown and caramelizes
Take it off the heat and set it aside
Put a tortilla in a clean pan thats on medium heat
Spread a quarter of the Monterey Jack cheese shreds on one half of the tortilla
On top of the cheese, put a quarter of the pineapple that has been caramelized, diced red bell pepper, and chopped cilantro
To make a half-moon shape, fold the other half of the tortilla over
It should be cooked for two to three minutes on each side, or until the cheese melts and the tortilla gets crispy
Do this step again with the rest of the tortillas and filling
Add a lot of spicy strawberry salsa to the top of each quesadilla wedge when you serve it
Go with a spicy strawberry salsa to go with your pineapple quesadillas that have been caramelized
Theyre a great snack or starter because theyre both sweet and savory
