Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons brown sugar

- 1/4 teaspoon salt
- 2 large eggs
- 1 1/4 cups milk
- 2 tablespoons melted butter
- 2 ripe bananas, sliced
- Additional brown sugar and cinnamon for sprinkling
- Whipped cream optional
- Maple syrup optional
Instructions:
In a mixing bowl, combine the all-purpose flour, brown sugar, ground cinnamon, and salt
In another bowl, whisk together the eggs, milk, and melted butter
Pour the wet ingredients into the dry ingredients and mix until you have a smooth batter
Heat a non-stick skillet over medium-high heat and lightly grease it with butter or cooking spray
Pour a small amount of the crepe batter into the skillet, swirling it around to coat the bottom evenly
Cook for about 1-2 minutes or until the edges start to lift and the crepe is lightly browned on the bottom
Flip the crepe and cook for an additional 1-2 minutes on the other side
Remove the cooked crepe from the skillet and keep it warm while you repeat the process with the remaining batter
To serve, place banana slices in the center of each crepe, sprinkle with brown sugar and cinnamon, and fold the crepe in half or roll it up
Top with whipped cream and drizzle with maple syrup if desired
