Ingredients:
- 4 slices of bacon, chopped
- 4 cups fresh or frozen corn kernels
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions:
Crisp up the chopped bacon by cooking it in a skillet over medium heat
The bacon drippings should remain in the skillet after the bacon has been removed and set aside
To the skillet with the bacon drippings, add the diced onion and red bell pepper
Simmer for approximately five minutes, or until they are soft and beginning to caramelize
Add the minced garlic and stir
Cook for one more minute, or until fragrant
When the corn is soft and beginning to brown, add the kernels to the skillet and cook, stirring periodically, for five to seven minutes
Take the crispy bacon back to the skillet and combine it with the vegetables and corn
Add salt and pepper to taste and season the dish
Add some finely chopped fresh parsley on top to add some color and taste
Serve your tasty side dish of skillet corn with bacon for the ideal summertime meal
